I try Kikurage Ramen for the first time. Watch me react to Tonkotsu broth ramen with wood ear mushroom and homemade chili. As the story goes, over 50 years ago, in the region of Ogori in Fukuoka Prefecture in Japan, Horin used chili peppers in its tonkotsu (pork bone broth) ramen. It became famous throughout the land as “the restaurant where chili ramen was created.” This was delicious, spicy ramen and the kikurage mushrooms ads a unique texture.
