INGREDIENTS
• 2 Eggs (Whisked)
• ¼ cup Shallot
• 2 stalks Green Onion (Chopped)
• ¼ cup Carrot (Finely diced)
• 1 cup Cooked Quinoa
• 1 tbsp Light Soy Sauce
• 1 tsp Chili Bean Paste or Chili Sauce (Optional)
• ½ tsp Sesame Seed Oil
• ¼ cup Green Peas
• Salt & White Pepper (to taste)
• 3 tbsp Cooking Oil
INSTRUCTIONS
• Cook your eggs: In a wok over medium-high heat with a little oil, scramble the eggs until they're cooked through. Then, take them out of the wok and put them aside for now.
• Start the aromatic base: Using the same wok, pour in 2 tbsp of cooking oil. Add the shallots and the white parts of the green onions, and stir-fry them for about a minute.
• Add the carrots: Toss in the chopped carrots and continue stirring for another two minutes, allowing them to soften slightly.
• Combine the main ingredients: Now, add the cooked quinoa, light soy sauce, sesame seed oil, and chili bean paste (or your preferred chili sauce). Give everything a good stir to mix it all together.
• Bring back the eggs and add peas: Return the scrambled eggs to the wok, and add the green peas.
• Mix thoroughly: Stir everything together until all the ingredients are evenly distributed and heated through.
• Taste and adjust: Have a taste and see if you need to add any salt or pepper to enhance the flavor.
• Finish with fresh green onion: Finally, sprinkle the remaining chopped green onion over the top and give it a final stir.
HOW TO COOK QUINOA INGREDIENTS:
• 1 cup quinoa
• 1 ¾ cups water or broth (vegetable or chicken)
• Pinch of salt (optional)
INSTRUCTIONS:
• Rinse the Quinoa: Place the quinoa in a fine-mesh strainer. Rinse it thoroughly under cold running water for about 1-2 minutes. This removes the saponin, which can give quinoa a bitter taste.
• Combine Ingredients: In a medium saucepan, combine the rinsed quinoa, water or broth, and salt (if using).
• Bring to a Boil: Bring the mixture to a boil over medium-high heat.
• Simmer: Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes. The quinoa is done when the liquid is absorbed and the grains are tender.
• Rest: Remove the saucepan from the heat and let it stand, covered, for 5-10 minutes. This allows the quinoa to steam and become fluffy.
• Fluff and Serve: Use a fork to fluff the cooked quinoa before serving.
