Sankoo Yat Sai is essentially a tapioca ball stuffed with filling. This item is usually made on special occasions, like New Years and celebrations, mainly because it's labor intensive! It requires some skill in making the tapioca balls but you won't regret it! The flavor is sweet and savory. It's traditionally topped with fried chili's and fried garlic. You can turn it into a meal by simply adding herbs and lettuce.
Ingredients:
Makes about 24 balls (depending on the size)
1/2 lb ground pork
1 bag of small tapioca pearls
3 tbsp dark soy sauce
2 tbsp fish sauce
3 tbsp brown sugar
1/2 c sweet radish
1 tbsp salted radish
1c cilantro
1c roasted peanuts
Tip: cook the filling with a cornstarch slurry right before it’s finished. Allow the filling to cool and form small balls before making the tapioca balls.
