In this Video, I show you a quick & easy way to ferment your excess cucumbers & zucchini. It only takes a few minutes, and once complete, they will store well in the refrigerator for weeks or even months.
These are not store-bought pickles, which are soaked in vinegar to get their sour tangy taste. Rather, they are far superior, because their tangy taste comes from the probiotic microorganism called Lactobacillus.
This bacteria is present on the surface of the vegetable, even after washing them off, so no need to buy probiotic starters online because it will take care of itself.
All you have to do is add 2 tbsp coarse sea salt to 4 cups of filtered water to make brine and pour this over the vegetables in a clean jar, loosely apply an inner and outer lid, keep at room temperature for a few days until the fermentation is complete, and then store in a cool place like the refrigerator.
