Paul Hollywood's "Mini Pork Pies with Quail's Eggs" was the fifth technical challenge in The Great British Bake Off (GBBO) Season2. This is Paul Hollywood's classic mini pork pies recipe.

I was so inspired by GBBO that I wanted to try all the technical challenge recipes.
GBBO S02E05 - Pies week - Paul Hollywood's 6 Classic Miniature Pork Pies with Quail's Eggs
Ingredients
For the hot water crust pastry

200g/7oz plain flour
40g/1½oz strong white flour
50g/1¾oz unsalted butter, cut into cubes
100ml/3½fl oz water
1 tsp salt
60g/2¼oz lard
For the filling
---------------
6 quails' eggs
1 onion, very finely chopped
350g/12oz pork loin, finely chopped
100g/3½oz unsmoked streaky bacon, finely chopped
small bunch of parsley, finely chopped
sea salt and freshly ground black pepper
1 free-range egg, beaten
Optional:
1 chicken stock cube
150ml/5fl oz boiling water
1¾ teaspoon gelatine powder

The Ploughman’s lunch is ideal for creating a quick lunch which can be eaten cold, so its great for taking with you to work or on a day out in the countryside. Of course, nowadays you may use microwave and have it when hungry. Sprinkle some grated cheese over the top of the pie, then put it back in the oven for a minute to let the cheese melt over the top of the pie – delicious!
The Ploughman’s lunch is a wonderful English tradition that originated as a packed lunch for the workers to take out into the fields for a Ploughman. There’s some debate about where the name and contents of the meal comes from, there’s a strong argument for the idea evolving in the 1960s due to the Cheese Bureau’s attempt to increase the consumption and sale of cheese, since at time, it was no longer a rationed item after the Second World War. Others claim it must have been over a century before this that it was first deemed the Ploughman’s lunch as there’s mentions of it in the 1837 Memoirs of the Life of Sir Walter Scott. There’s arguments against this however saying that it could be referring to the lunch of the ploughman in general and not this specific combination. Either way, the combination will have been eaten for centuries so we’re not completely sure when it originated.
