For the filling

Pecorino romano cheese - 500 grams/ 1 lb 2 oz
Halloumi cheese - 250 grams/ 9 oz
Plain flour - 75 grams/ 2½ oz
Fine semolina - 90 grams/ 3¼ oz
Instant yeast - 7 grams
Dried mint - 2 teaspoons
Sultanas - 100 grams/ 3½ oz
Eggs - 4
Milk - 4 tablespoons
Baking powder - 1 teaspoon
For the pastry

Strong plain flour -750 grams/ 1 lb 10 oz
Mastic powder - 1 teaspoon
Ground mahlepi - 2 teaspoons
Caster sugar - 1 teaspoon
Salt - 1 teaspoon
Instant yeast - 7 grams
Unsalted butter - 60 grams/ 2¼ oz, softened
Full-fat milk - 450 ml/ 16 fl oz
For the glaze
