INGREDIENTS
• 1 Napa Cabbage
• ½ cup Shallots (chopped)
• 500 grams Ground Chicken
• 3 -4 Cloves Garlic (Finely chopped)
• 1 cup Bamboo Shoots (Sliced, you can use from a can)
• 1 cup Mushrooms (Sliced)
• 1 cup Carrot (Shredded)
• 1 tsp Ginger (Grated)
• ¼ cup Red Chilis (Sliced, optional)
• Salt (for seasoning)
• 1 tsp White Pepper
• 2 tbsp Soy Sauce
• 1 tbsp Sesame Seed Oil
• 3 Stalks Green onion (Chopped)
• ½ cup Cilantro (Roughly chopped)
INSTRUCTIONS
• In a large pot or skillet, heat a little oil over medium-high heat. Add the shallots and cook until they are soft and fragrant.
• Add the ground chicken and cook, breaking it up with a spoon, until it is fully browned. Stir in the garlic and cook for about a minute until you can smell it.
• Add the bamboo shoots, carrots, mushrooms, ginger, and chili pepper (if using). Continue to cook until the vegetables have softened.
• Stir in the salt, white pepper, soy sauce, and sesame oil until everything is well combined.
• Remove from heat and stir in the green onions and cilantro. Set the filling aside to cool completely.
• Cut the tough stems from the napa cabbage leaves and give them a good wash.
• Carefully place the leaves in a pot of simmering water for a couple of minutes until they are tender and pliable.
• Place a cabbage leaf on a flat surface. Add 1 to 2 tablespoons of filling to the wider end. Fold in the sides, then roll tightly to create a neat packet.
• Gently grill the rolls in a lightly oiled skillet over medium-high heat, cooking for a few minutes on each side until they are golden and have a nice char.
