Ingredients:
Thick-cut bacon: 150g (about 5.3 oz), cut into cubes
Pasta (rigatoni or your choice): 200-300g (about 7-10.5 oz)
Parmesan cheese: 50g (½ cup), finely grated
Pecorino Romano cheese: 50g (½ cup), finely grated
Eggs: 1 whole egg and 2 egg yolks (or 2 whole eggs for a lighter version)
Salt: A pinch for pasta water
Pasta water: 60ml (¼ cup) reserved, with more as needed
Freshly ground black pepper: To taste
Instructions:
Cook the bacon:
In a cold pot, add the cubed bacon and set the heat to medium. Cook, stirring occasionally, for 5-7 minutes until the fat renders and the bacon is crispy. Remove the bacon and fat, placing them into a bowl.
Cook the pasta: In the same pot, add water and a pinch of salt. Once boiling, add the pasta and cook according to the package directions for al dente.
Prepare the sauce:
In the bowl with the bacon and fat, add 1 whole egg, 2 egg yolks (or 2 whole eggs for a lighter sauce), the grated Parmesan and Pecorino Romano cheeses, and a generous amount of freshly ground black pepper. Mix until well combined.
Temper the eggs:
Slowly stream about 60ml (¼ cup) of the reserved pasta water into the egg and cheese mixture, stirring constantly to temper the eggs and create a smooth sauce.
Combine:
Drain the pasta and return it to the pot off the heat. Pour the sauce over the pasta, mixing thoroughly to coat. Add the reserved pasta water as needed to reach your desired sauce consistency.
Serve:
Finish the dish by topping with any remaining bacon and a generous amount of freshly ground black pepper for an extra kick of flavor.
