Perfect Vanilla Sponge Cake
Ingredients (in grams):
• Flour – 90g
• Sugar – 120g
• Baking Powder – 4g
• Milk – 60g
• Vanilla Essence – 1 tsp
• Eggs – 2 (at room temperature)
Ingredients (in cups):
• Flour – ½ cup
• Sugar – ½ cup
• Baking Powder – 1 heaped tsp
• Milk – ¼ cup
• Vanilla Essence – 1 tsp
• Eggs – 2 (room temperature)
Method:
1. Beat egg whites until foamy, gradually adding half the sugar.
2. In a separate bowl, beat egg yolks with the remaining sugar until light and fluffy.
3. Gently fold in sifted flour and baking powder.
4. Add milk and vanilla essence, and fold until smooth.
5. Pour into a lined tin and bake at 160°C for 30–35 minutes, or until done (baking time may vary by oven).
Your soft, fluffy sponge — without any oil or butter — is ready!
