EASY CHEESEBURGER POTATO CASSEROLE

Описание: Easy cheeseburger potato casserole. Simple to prepare weeknight comfort food dish made with seasoned ground beef, baked potatoes, onions, colorful peppers, mushroom soup and plenty of cheddar cheese. A hearty and filling cheeseburger casserole you'll enjoy again and again.

Servings: 4-6 (4 x 8 baking pan)

Shopping List:
1 lb. ground beef chuck 80/20
2 tbsp. canola or vegetable oil (divided)
1 small sweet onion, diced
1 small green bell pepper, diced
1 small red bell pepper, diced
2 small microwavable baked potatoes, sliced into thin rounds ( I use these because they are ready in 6 minutes)
(1) 10.5 oz. can cream of mushroom soup
2 cups cheddar cheese, shredded (use the block cheese. It melts better)
1 tsp. each onion and garlic powder
1 tbsp.. paprika
Salt and pepper to taste

Directions:
Pre-heat oven to 350F.
Microwave the potatoes two minutes less that wrapping instructions, about 4 minutes. When done, slice into thin rounds and place in the bottom baking pan on a single layer. Cover with 1/2 of the cheddar cheese.
Heat a skillet to medium high then add 1/2 of the oil. Add ground beef, brown, drain grease and set aside.
In the same skillet reduced to medium heat, sauté the onions and peppers until softened then add the ground beef and add the seasonings.
Turn off the heat and add the soup to the meat mixture. Stir then pour on top of the potatoes and spread evenly. Cover with the remainder of the cheese.
Bake in oven for 25-30 minutes then rest for 5-10 minutes before slicing and serving.
Garnish with parsley and serve.
