Cherry Tiramisu Recipe
Ingredients:
250 g ladyfinger biscuits (savoiardi)
250 g mascarpone cheese
200 ml heavy cream
100 g powdered sugar
300 g pitted cherries (fresh or canned)
100 ml cherry syrup or juice (from the canned cherries or fresh juice)
2 tbsp kirsch or cherry liqueur (optional)
200 g dark chocolate or chocolate ganache for topping
Instructions:
1. Prepare the cherries:
If using fresh cherries, pit them and set aside. If using canned cherries, drain them, reserving the juice.
2. Make the cherry syrup:
In a small bowl, mix the cherry juice with kirsch or cherry liqueur (if using). This will be used to soak the ladyfinger biscuits.
3. Whip the cream:
In a separate bowl, whip the heavy cream until stiff peaks form.
4. Prepare the mascarpone mixture:
In another bowl, whisk together the mascarpone cheese and powdered sugar until smooth. Gently fold in the whipped cream until well combined.
5. Assemble the tiramisu:
Dip each ladyfinger briefly in the cherry syrup, ensuring it doesn’t get too soggy.
Layer the soaked ladyfingers in the bottom of a dish.
Spread half of the mascarpone mixture over the ladyfingers.
Add a layer of pitted cherries.
Repeat the layers: soaked ladyfingers, mascarpone mixture, and cherries.
6. Add the chocolate topping:
Melt the dark chocolate or prepare a chocolate ganache and spread it on top of the tiramisu.
7. Chill:
Refrigerate the tiramisu for at least 4 hours (preferably overnight) to allow the flavors to meld.
8. Serve:
Serve chilled, optionally garnished with more cherries or shaved chocolate.
