How to Make Cherry Tiramisu - A Summer Twist on a Classic

Tiramisu is hands-down my favourite dessert—and with cherry season in full swing, I couldn’t resist giving this classic a fresh, fruity twist. This Cherry Tiramisu is rich, creamy, and bursting with summer flavour. Trust me, you’ll want to try this one.
Ingredients:
3c cherry, pitted
1c + 1Tbsp sugar, divided
1 Tbsp kirsch
1/4c water
1Tbsp lemon juice
6 yolks
2c espresso, chilled
1 1/2c mascarpone
2c whipping cream
2tsp vanilla extract
28 lady fingers
70% dark chocolate, microplanned
Directions:
1. In a pan over medium-low heat, sauté the cherries with 1 tablespoon of sugar, kirsch, and water for about 15 minutes, until the liquid reduces to a jammy consistency. Stir in the lemon juice, mash gently with a masher, and set aside to cool.
2. In a heatproof bowl, whisk the egg yolks with the remaining 1 cup of sugar. Place the bowl over a double boiler and whisk continuously for about 10 minutes, until thickened and pale. Remove from heat, let it cool slightly, then whisk in the mascarpone until smooth.
3. In a separate bowl, whip the cream to soft peaks. Add the vanilla extract, then continue whipping until stiff peaks form.
4. Gently whisk half of the whipped cream into the mascarpone mixture to lighten it. Fold in the remaining whipped cream until fully combined and airy.
5. Quickly dip the ladyfingers into the espresso and arrange them in a single layer at the bottom of a 9x9-inch pan. Spread half of the mascarpone mixture overtop. Add another layer of espresso-dipped ladyfingers, then spoon over the cherry mixture, and finish with the remaining mascarpone. Insert a few toothpicks on top to help maintain the shape, cover with plastic wrap, and refrigerate for at least 6 hours or overnight.
6. Just before serving, microplane dark chocolate generously over the top.
