In this recipe, we marinate chicken in yogurt, ginger-garlic paste, and traditional spices to infuse rich flavors. The chicken is then layered with partially cooked basmati rice, saffron milk, fried onions, and fresh herbs, and cooked on dum (steam) for that authentic biryani aroma and taste.

Step 1: Prepare the Chicken Marinade
Take 1 kg chicken (with bone or boneless).
Add 1 cup yogurt, 2 tbsp ginger-garlic paste, 2 tsp red chili powder, 1 tsp turmeric, 1 tsp coriander powder, ½ tsp garam masala, salt to taste, and 2 tbsp lemon juice.
Mix well, cover, and let it marinate for at least 30 minutes (or overnight for best flavor).
Step 2: Cook the Rice
Wash and soak 3 cups basmati rice for 30 minutes.
In a large pot, boil water with 2-3 bay leaves, 3-4 cloves, 2-3 green cardamoms, 1 cinnamon stick, 1 tsp salt, and 1 tsp oil.
Add soaked rice and cook until 70% done (grains should still be firm).
Drain and set aside.
Step 3: Fry the Onions
Heat oil in a pan.
Add 3 large sliced onions and fry until golden brown and crispy.
Remove and keep aside (these will be used for layering).
Step 4: Cook the Chicken
Heat 4 tbsp oil or ghee in a heavy-bottomed pan.
Add marinated chicken and cook on medium heat until the chicken is tender and the masala is thick.
Add half of the fried onions and a handful of chopped coriander and mint leaves.
Stir well and set aside.
Step 5: Prepare Saffron Milk (optional but authentic)
Warm ¼ cup milk and add a pinch of saffron strands (or ½ tsp yellow food color).
Let it soak for a few minutes.
Step 6: Layer the Biryani
In a large heavy pot, spread a layer of chicken with masala at the bottom.
Add a layer of rice on top.
Sprinkle some fried onions, coriander, mint leaves, and saffron milk.
Repeat the process until all rice and chicken are layered.
End with rice on top and garnish with remaining onions and herbs.
Step 7: Dum Cooking (Steaming)
Cover the pot with a tight lid (or seal with dough to trap steam).
Cook on very low flame for 20–25 minutes.
Let it rest for 10 minutes before serving.
Step 8: Serve and Enjoy
Fluff the rice gently with a fork.
Serve hot with raita, salad, or green chutney.
