Use seasonal summer stone fruits like cherries, peaches and apricots to make this easy and express dessert.
Cherries take a bit of time to put but peaches, apricots, plums and Jamuns are easy to do. This recipe is pure vegetarian and you can serve it warm with whipped cream, vanilla icecream and custard also. Enjwaaaay!
Juice of 1 lemon
1.5 tsps cornstarch
1 tsp vanilla extract
1 cup sliced jamuns
1 cups peaches sliced
1 cup pitted cherries
1/2 cup pitted fresh apricots
1 cup brown sugar more if fruits and not sweet enough
1/2 tsp cinnamon powder
For the topping
1.5 cups maida
1/2 cup oatmeal
1/2 tsp salt
1/2 tsp cinnamon
2 tbsp castor sugar
200 grams unsalted butter cold cut into small pieces
Method
Preheat oven to 350F
Combine juice of lemons and cornstarch to make a slurry in a large mixing bowl. Add vanilla and cinnamon and mix. Add all the prepared fruits and brown sugar and mix well. Pour into a 9 inch round baking dish.
Combine all the Ingredients for the topping in a mixing bowl and mix using your fingertips until crumbly. Scatter over the fruit and bake until top is golden brown and fruit is bubbly.
Serve warm with vanilla icecream.
