Chilli Garlic Chicken Noodles Recipe
Ingredients:
• 1 kg chicken breast, flattened slightly and cut into 2cm cubes
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp garlic powder
• 1 tsp onion powder
• 2 medium-sized pak choy, leaves torn off
• 1 stem spring onion, thinly sliced diagonally
• 3-4 cloves garlic, finely diced
• 25ml low sodium soy sauce
• 30g chili oil (e.g., Lee Kum Kee Chiu Chow Style Chili Oil)
• 20g siracha sauce
• 30ml water
• 5g sugar
• 800g hokkien-style noodles (or noodles of your choice)
• Cooking oil
Instructions:
1. Fill a medium-sized pot halfway with water and place it on the stove with a lid. Bring it to a boil; this will be used to cook the noodles later.
2. Tear each individual leaf of pak choy and place them in a bowl. Wash any dirt off the leaves if necessary.
3. Finely slice the spring onion diagonally after cutting off the root end.
4. Prepare the garlic by lightly crushing it with the flat side of a knife, cutting off both ends, peeling, and then slicing roughly. Run the knife through several times to finely dice.
5. Cut the chicken breast into 2cm strips and then into 2cm cubes. Place the chicken on a plate and season with salt, pepper, garlic powder, and onion powder. Mix well to coat evenly and set aside.
6. In a bowl, combine low-sodium soy sauce, chilli oil, sriracha sauce, water, sugar, and diced garlic. Stir to combine and set aside.
7. Heat a large frying pan over high heat and lightly oil it.
8. Add the seasoned chicken to the pan and brown on one side for about 2 minutes. Flip and cook until the chicken is 90% cooked through. Remove from the pan and set aside on a plate.
9. Cook the noodles according to package instructions, drain and set aside.
10. Place the large frying pan back on high heat and add the chilli garlic sauce. Allow it to simmer for 30 seconds.
11. Add the pak-choy and spring onion to the pan, followed by the cooked chicken. Mix well and cook for 2-3 minutes.
12. Add the cooked noodles to the pan and toss everything together. Cook until the chicken is completely cooked through.
13. Divide the chilli garlic noodles evenly into 5 containers, ensuring all components are distributed.
