217 calories and 3 net carbs per muffin - recipe makes (on average) 20 muffins
Ingredients:
250 g (8.8 ounces) almond flour
60 g ( 2.1 ounces) erythritol (sugar substitute - you can use xylitol if you prefer)
3/4 tsp gluten-free baking powder
1/2 tsp bicarb
1/4 tsp sea salt
40 ml (1.4 fluid ounces) coconut oil
40 ml (1.4 fluid ounces) almond milk
1+1/2 large organic eggs
1/2 tsp vanilla
60 g (2.1 ounces) blueberries
Zest of an orange (you could also use lemon)
1/2 tsp apple cider vinegar (optional)
