Ingredients
4 Tbsp – Ghee
2 Tbsp – Cashew nuts chopped
2 Tbsp – Almonds chopped
1 Tbsp – Pistachio chopped
1 Tbsp – Raisins
2 Tbsp – Semolina
8 No - Indian gooseberry boiled & grated
1 Cup – Jaggery powder
1 Tsp – Green cardamom powder
½ Tsp – Fennel seeds powder
½ Tsp – Dry ginger powder
¼ Tsp – Black pepper powder
1 Cup – Khoya
Method:-
1. Heat ghee in a heavy-bottom pan on medium flame.
2. Add cashew nuts, almonds, pistachios, and raisins. Sauté until nuts turn lightly golden and raisins puff up.
3. In the same ghee, add semolina and roast on low flame till aromatic and light golden.
4. Add grated amla and mix well. Cook for 4–5 minutes until moisture reduces and raw smell disappears.
5. Add jaggery powder and stir continuously. The mixture will loosen initially and then thicken.
6. Add cardamom powder, fennel powder, dry ginger powder, and black pepper powder. Mix well.
7. Add crumbled khoya and cook on low flame, stirring continuously, until the halwa becomes thick, glossy, and starts leaving the sides of the pan.
8. Turn off the flame and side out in a serving bowl.
Garnish with the toping of crumbled khoya.
