Lemon Blueberry Pancakes
Delicious light and fluffy pancakes with the flavors of real lemons and blueberries infusioned. Served with blueberry syrup and lemon vanilla whipped cream.
Pancakes
All-purpose flour - 2 cups
Sugar - 2 tsp
Baking Powder - 2 tsp
Salt 1/2 tsp
Eggs - 2 large
Buttermilk - 2 1/2 cups
Butter - unsalted, 4 tbsp, melted
Sift all dry ingredients before adding wet ingredients.
Do NOT over mix. Don't worry if there are a few lumps.
Let the batter rest for, at least, 15 minutes before cooking.
Whipped Cream
Heavy Whipping Cream - 2 cups
Lemon Juice - 2 oz
Sugar - 1 tsp
Vanilla Extract - 1/2 tsp
Blueberry Syrup
Sugar - 1/4 cup, or 2 oz of Agave Nectar
Water - 2 oz
Corn Starch - 1 tsp
Fresh Blueberries - 1/4-1/2 cup
