Dr. Mesfin Mekonnen explains water sustainability and food systems. In this month's WaterWorks talk at The University of Alabama, discover the hidden water costs embedded in everything we consume—from the 35 gallons required for your morning coffee to the invisible flows of "virtual water" connecting global food systems.
Dr. Mekonnen, our Global Water Security Center Research Fellow, reveals how agricultural production is reshaping freshwater resources worldwide and what pathways exist toward sustainability.
This presentation draws on decades of research modeling 169 crops across 50 years to expose where water stress intensifies, why productivity gains alone won't save us, and how interconnected trade networks make local water scarcity a global concern.
This Talk Is Perfect For:
Water resource managers navigating agricultural demands
Environmental scientists studying food-water-energy systems
Policymakers addressing water security and food production
Graduate students in hydrology, agriculture and sustainability
Anyone curious about the water footprint of their food choices
💡You'll Discover:
How virtual water flows through global trade make regional droughts everyone's problem
Why agricultural water productivity improved significantly yet water stress continues rising
The dramatic water differences between food types and their implications for sustainability
How energy sector shifts toward biofuels can reduce carbon but dramatically increase water consumption
Actionable solutions: closing yield gaps, reducing waste, improving irrigation, and strategic dietary shifts
🔬 Key Insights:
Agriculture consumes 60-70% of global freshwater, with production increasing 2.5 times since 1972
Crop water footprints declined across most categories due to productivity gains, preventing water demand from doubling
Animal products require substantially more water per unit of nutrition than plant-based alternatives—beef uses far more than chicken or pork when accounting for human-edible feed
Without productivity improvements, current water footprint would be nearly twice what it is today
📢 About the Speaker:
Dr. Mesfin Mekonnen is assistant professor in The University of Alabama's Department of Civil, Construction and Environmental Engineering and a Global Water Security Center Faculty Fellow. His research focuses on water footprint assessment, water scarcity, and the water-food-energy nexus. He has published over 80 highly cited peer-reviewed articles and serves on the editorial board of Frontiers in Sustainable Food Systems journal.
