HEALTHY PECAN PIE RECIPE
Ingredients:
• Crust:
o 1 ½ cups almond flour
o 1/4 cup coconut oil or vegan butter, melted
o 2 tablespoons maple syrup or agave syrup
o 1/4 teaspoon salt
o 2-3 tablespoons cold water (as needed)
• Filling:
o 1 ½ cups pecans, chopped (reserve some whole for topping)
o 1 cup unsweetened almond milk or other plant-based milk
o 1/2 cup maple syrup or agave syrup
o 1/4 cup coconut cream
o 2 tablespoons cornstarch or arrowroot powder
o 1 teaspoon vanilla extract
o 1 teaspoon cinnamon (optional)
o A pinch of salt
Instructions:
1.Preheat the oven to 350°F (175°C).
2.Make the crust: In a bowl, mix almond flour and salt. Add melted coconut oil and maple syrup, then mix until crumbly. Gradually add cold water until the dough holds together. Press the dough into a pie pan evenly.
3.Pre-bake the crust: Bake the crust for about 10-12 minutes until lightly golden. Remove from the oven and let it cool.
4.Prepare the filling: In a blender, combine almond milk, maple syrup, coconut cream, cornstarch, vanilla extract, cinnamon, and salt. Blend until smooth.
5.Add pecans: Stir in chopped pecans and pour the filling into the pre-baked crust. Top with whole pecans for decoration.
6.Bake: Bake for 30-35 minutes, or until the filling is set and slightly firm to the touch.
7.Cool: Allow the pie to cool completely before slicing. This will help the filling firm up even more.
