Slow Cooker Beef Vegetable Soup
4 servings
1 Lean, 3 Greens, 2 Condiment per serving
Calories: 289, Fat: 7 grams, Protein: 48 grams, Carbohydrates: 5.72 grams
1 3/4 lbs. boneless lean beef chuck, trimmed of fat and cut into strips
4 C reduced sodium beef stock
1/4 C sliced fresh chives
1/2 c. chopped fresh parsley
6 C non-starchy vegetables (I used a combo of broccoli, cauliflower, zucchini, and green beans) fresh or frozen
1 t salt
*I left out the salt and the parsley from my recipe.
Combine the beef, the stock, and salt in the slow cooker and cook on high for 2-3 hours until the beef is tender.
Add in the vegetables for another 45 min. to an hour.
Divide into four servings and garnish with chives and parsley if desired.
