Описание: Fresh spring rolls are a healthy and delicious meal, served with a savory peanut dipping sauce. This recipe is vegetarian, but you can add cooked shrimp, pork, or chicken if you like.
Tamarind dipping sauce
This is an American-style version that is thick, creamy, and easy to make.
Ingredients
1/3 cup tamarind juice
2 tbsp ketchup
1/2 tsp garlic powder, or 1 clove minced
1/4 tsp fish sauce , to taste
Sriracha or chili sauce (optional)
Instructions

Instructions
Combine the tamarind juice ,ketchup,, and garlic powder in a small saucepan over medium-low heat.
Stir constantly until the sauce is smooth and warm. Do not boil. Add more water to thin the sauce if needed.
Add fish
sauce to taste, and chili sauce if you want to make it spicy.
Remove from heat and set aside while you prepare the spring rolls.
Fresh spring rolls
Ingredients
8–10 rice paper wrappers
1/2 package rice vermicelli noodles
1 large carrot, peeled and julienned
1 avocado,thinly sliced
1 cucumber, julienned
1 bunch lettuce
1 bunch fresh mint
1 bunch fresh cilantro
4 eggs omelette style already cook and thinly slice for protein of choice (optional)
Instructions
Prepare your ingredients. Cook the vermicelli noodles according to package directions, then rinse with cold water to keep them from sticking. Julienne the vegetables and chop the herbs.
Set up your workspace. Fill a shallow pan or bowl with warm (but not hot) water. Lay a clean, damp tea towel on your counter or cutting board.
Soften a rice paper wrapper by dipping it in the warm water for about 10–15 seconds, until it becomes pliable but not mushy.
Carefully place the softened wrapper flat on the damp tea towel.
Add filling ingredients to the center of the wrapper in a horizontal line, leaving about an inch of space on the sides. Do not overfill.
To roll, fold the side edges over the filling. Then, fold the bottom of the wrapper tightly over the filling and continue rolling upward to seal.
Repeat with the remaining wrappers. Serve the fresh spring rolls with your prepared tamarind dipping sauce.
