A simple recipe for an excellent meal.
1 lb of ground 80/20
1 package of bacon
Half white onion
4-5 garlic cloves
Your favorite rub ( I used Machete from Meat Hammer Rubs)
Your favorite bbq sauce (I used Sweet Baby Rays original)
Dice up your onion & garlic, add seasoning, then blend with your ground beef.
take your bacon and make a lattice with it so you can wrap the loaf.
Prep your smoker and get to 250 degrees, then place your meatloaf in the smoker. Note: this is a only 1 lb, so at 250 degrees you are looking to smoke to an internal temperature of 160 degrees which will probably take about 2 hours or so. Cook to temp, not to time.
Once it’s about 30 minutes away from being done I do like to add a coating of bbq sauce to get even more of the Smokey flavor, after all its only in there a couple to a few hours.
Slice it up and enjoy on some Hawaiian King bread or on a bed of mashed potatoes.
