Ingredients
Eggplant/Brinjal – 250 g, horizontally sliced.
Chilli powder – 3/4 tsp.
Turmeric powder – 1/4 tsp.
Ginger – 1 small piece.
Garlic – 3 cloves.
For masala
Coriander seeds – 1 tsp.
Mustard – 1/2 tsp.
Cumin – 1/2 tsp.
Fenugreek seeds – 1/2 tsp.
Salt to taste.
Oil – 2 tbsp.
Curry leaves.
Preparation
Heat masala mix in a sauce pan and keep it aside. Once the mix is cool enough, grind it using a mixer grinder. Our special masala is ready.
Heat oil in a sauce pan. Add ginger and garlic. Saute well until the raw smell fades away. Add eggplant, turmeric powder, chilli powder, and salt. Mix well and cook it on a low flame for 5 minutes. Add the special masala and mix it well. Cook for another 2 to 3 minutes. Our vazhuthananga fry is ready. Garnish it with curry leaves. Please try this recipe and give us the feed back.
