Rich, fudgy chocolate brownies for Valentine’s. Check. With zucchini mixed in for extra lusciousness? Oh, yes!

Zucchini Brownies Recipe (makes 12)
8 ounces of zucchini, roughly chopped (approx 1 8-in zucchini)
4 tablespoons melted butter
3 large eggs
¾ cup sugar
⅔ cup cocoa powder
½ cup flour
¾ cup semi-sweet chocolate chips or chunks
1. Lightly grease a 9x13-inch pan, and preheat your oven to 350 F.
2. In a food processor, blend the eggs, butter and zucchini until liquified.
3. Add the sugar, cocoa powder and flour. Blend again until the batter is smooth and evenly colored.
4. Add the chocolate chips and pulse 5 times to distribute.
5. Pour the batter into the pan and bake 20-25 minutes. Once the timer hits 20 min, start checking for doneness. Moist crumbs should cling to a toothpick, but the brownies should be firm.
6. Allow the brownies to cool in the pan before cutting them.
