Sel Roti is a traditional Nepali rice-based doughnut that is often made during festivals and special occasions. Here's a basic recipe for making Sel Roti at home:
Ingredients:
2 cups rice (preferably soaked for 4-5 hours or overnight)
1/2 cup urad dal (black gram), soaked for 4-5 hours or overnight
1/2 teaspoon cumin seeds
1/2 teaspoon whole pepper
1 teaspoon fenugreek seeds
1/2 teaspoon baking soda
Oil for frying
Water (as needed)
Sugar (optional, for sweetness)
Instructions:
Soaking:
Rinse the rice and urad dal thoroughly. Soak them in water for 4-5 hours or overnight.
Grinding:
Drain the soaked rice and urad dal.
In a blender or wet grinder, grind the rice and urad dal together into a smooth batter. Add water as needed to achieve a thick, smooth consistency.
Seasoning:
Add cumin seeds, whole pepper, fenugreek seeds, and baking soda to the batter. Mix well. You can also add sugar if you want a slightly sweet taste.
Fermentation:
Allow the batter to ferment for at least 8 hours or overnight. This helps in making the sel roti soft.
Frying:
Heat oil in a pan or kadai for deep frying.
The batter should be of a dropping consistency. If it's too thick, add a little water.
Take a funnel or a clean plastic bottle with a hole in the tip to drop the batter into the oil. You can also use your hands to shape the batter into a ring and slide it into the oil.
Shaping and Frying:
Hold the funnel or bottle over the hot oil and drop a small amount of batter in a circular motion to form a ring shape. You can make them as small or as large as you prefer.
Fry until the sel roti is golden brown on both sides. Make sure to cook the inner part properly.
Draining and Serving:
Remove the sel roti from the oil and place them on paper towels to absorb excess oil.
Serve sel roti hot with yogurt, pickles, or any desired side dish.
Remember that making sel roti might take some practice to get the shape and texture just right. Adjustments to the recipe, such as adding spices or sugar, can be made based on personal preferences.
