Gurer Payesh Recipe||Rice Pudding with jaggery

Hello everyone Payesh is an integral part of any Bengali household,its an rewarding experience so here I tried this recipe for this particular recipe we need fresh seasonal patali gur (nolen gur or call it a jaggery ) along with gobindobhog rice as these 2 ingredients plays a big role in this recipe.
Ingredients :
100 gms gobindobhog rice
300 gms nolen gur/patali gur (brown colour)
1 liter milk
1/2 tps of cardamom powder
Pinch of salt
Handfull of raisens
1 tps chopped almonds (optional )
Few drops of melted ghee or jharna desi ghee
Method :
1.Clean and Soak the rice for atleast 1 hour
Later drain the water completely and mix with few drops of ghee as per preferable and keep aside.
2.Now in a pan boil the milk keep stirring so it doesn't stick to the pan,this way when it reduces from its natural points then add the rice and cook in a very low flame as it takes lot of time .
3.Now keep stirring occasionally once the rice is very well cooked and it's bit thicker consistency add the cardamom powder and soaked raisens and give it a mix.
4.Now add a pinch of salt to enhance the tatse (the logic behind is really I despicable because I have seen this process from my Nanima time so I did the same ).
5.Now it's time to add the jaggery so in this stage turn off the gas and wait for 1 minute then add the jaggery and mix gently and cover with the lid so it helps the jaggery to dissolves completely before serving give it a mix and serve .
