🌾 Himachali Siddu with Walnut Stuffing
📝 Ingredients
For the Dough:
• 2 cups wheat flour
• 1 tsp dry yeast
• 1 tsp sugar
• ½ tsp salt
• 1 tbsp oil
• Lukewarm water (for kneading)
For Walnut Stuffing:
• 1 cup walnuts (coarsely crushed)
• 1/4 cup chopped onions
• 1 tsp ginger- garlic paste
• 1–2 green chillies
• 1 tsp coriander seeds
• 1 tsp cumin seeds
• Salt to taste
• Handful fresh coriander
For Coriander Chutney:
• Fresh green coriander- 100 gms (approx)
• Tomato - 200 gms
• Green chillies- 2-3
• Walnuts- handful
• Garlic- few
• Salt to taste
For Serving:
• Desi ghee
• Green coriander chutney

👩🍳 Process
1️⃣ Prepare the Dough
1. In a bowl, mix yeast, sugar and 1/4 cup lukewarm water. Let it rest for 5–10 minutes until frothy.
2. In a large bowl, combine flour and salt.
3. Add activated yeast mixture and knead into a soft dough using lukewarm water.
4. Grease wurg oil. Cover and let it ferment for 2–3 hours or until doubled in size.

2️⃣ Prepare the Walnut Stuffing
1. In a Jar, add crushed walnuts, chopped onions, garlic- ginger, paste, green chillies and coriander.
2. Add Coriander & cumin seeds and salt.
3. The stuffing should be coarse but slightly binding.

3️⃣ Shape the Siddu
1. Once dough rises, punch it gently and divide into equal portions.
2. Roll one portion into a thick disc.
3. Place 2–3 tbsp walnut stuffing in the center.
4. Seal properly and shape into a smooth round or oval bun.

4️⃣ Steam the Siddu
1. Place prepared siddu in a steamer lined with cloth or greased paper.
2. Steam for 15–20 minutes on medium flame.
3. Insert a toothpick/ khife — if it comes out clean, it’s done.

✨ Final Touch
Brush generously with hot desi ghee.
Serve warm with ghee or coriander chutney.
Soft outside, nutty & garlicky inside… pure Himachali comfort food 🤍
