Hilda’s Beef Empanadas baked off on the Yoder YS640 smoker. These guys are amazing!
Empanadas are little meat pies packed with flavor. You can really stuff them with anything, I’m going to experiment with some more bbq style fillings for sure. But today, we’re showing how Hilda makes them for us.
The Pellet Smoker is very versatile, it can smoke, grill, and bake. I set it to 400 degrees for this recipe and cooked them off on the top shelf. I didn’t get a huge amount of smoke flavor, but that’s ok, the filling has a ton of flavor already. It’s nice to be able to cook these outside on a hot summer day and not heat up the whole house. It would be easy to bake these off in a dutch oven too, but you would be a bit limited on the amount you could do at once.
Ingredients for 10 empanadas:
1 pound of 85 percent ground beef (don’t get any higher, you want some fat)
1 medium sweet yellow onion minced
2 hard boiled eggs
1 package of 10 Goya Discos
Seasoning to taste:
2 pinches of Salt
1 tbsp cracked black pepper
1 tbsp red pepper flake
2 tbsp granulated garlic
Brown beef with onions, add seasonings and incorporate. Once browned, rough chop the eggs and fold in.
Let cool if your patient enough. It’s easier to make the pies if the filling is refrigerated.
Using a dusting of flower, place the dough on your surface and roll it out one way making an oval.
Put a couple spoonfuls of filling into 1/2 of the oval. Fold over, and pinch off.
Bake for 20 minutes
