Lemon Genoise Cake with Lemon Diplomat Cream☺️
Sponge:
Ingredients
• 4 large eggs (room temp)
• 120 g caster sugar
• Zest of 1 lemon
• 120 g plain flour, sifted
• 30 g unsalted butter, melted & cooled
• Pinch of salt
Method
1. Whisk eggs, sugar, and lemon zest over gentle heat until warm (≈40°C).
2. Whip on high until pale, thick, and ribbon stage.
3. Fold in flour and salt in 2–3 additions.
4. Mix a little batter into melted butter, then fold back gently.
5. Bake at 170°C (160°C fan) for 25–30 min.
6. Cool completely before slicing.
Lemon Diplomat Cream
Ingredients
• 250 ml milk
• Zest of 1 lemon
• 3 egg yolks
• 60 g sugar
• 25 g cornflour
• 25 g butter
• 2–3 tbsp lemon juice
• 150 ml double cream, softly whipped
Method
1. Heat milk with lemon zest.
2. Whisk yolks, sugar, and cornflour.
3. Pour hot milk over yolks, return to heat, cook until thick.
4. Remove from heat, add butter and lemon juice.
5. Cool completely (cover surface).
6. Fold in whipped cream gently.
Lemon Syrup:
Ingredients
• 100 ml water
• 80 g sugar
• Juice of 1 lemon
Method
1. Heat water and sugar until dissolved.
2. Cool slightly, then stir in lemon juice.
Assembly:
1. Slice génoise into layers.
2. Brush each layer with lemon syrup.
3. Fill with lemon diplomat cream.
4. Chill at least 2 hours before serving.
