Today I’m learning how to make éclairs and cream puffs, step by step.
I’m still new to baking, but every class feels like a small reset — slow hands, quiet focus, and a moment to breathe.
In this video, I take you through the full process:
• making choux pastry
• piping and baking the shells
• whipping the cream
• preparing the chocolate fondant
• assembling and finishing each éclair
And while I bake, I’m sharing a little bit of the story behind it — learning new skills in my 30s, rebuilding parts of myself, and finding calm in something as simple as baking.

Instructions:
1. Gather all your ingredients.
2. Boil water, butter & salt.
3. Add flour and cook until the dough pulls from the sides.
4. Transfer dough to a bowl to cool.
5. Mix until steam disappears.
6. Add eggs in stages until smooth and glossy.
7. Fill a piping bag and pipe your eclairs/cream puffs.
8. Bake at 400°F for 30 minutes.
9. Whip cream with vanilla & sugar.
10. Fill a piping bag with the whipped cream.
11. Soften fondant with warm water.
12. Warm fondant, melt chocolate, and mix together.
13. Dip the tops of baked eclairs.
14. Slice off the top third of each shell.
15. Fill with whipped cream.
16. Replace tops at a slight angle.
17. Dust cream puffs with icing sugar.
18. Place finished eclairs in paper cups.
