Presenting author, Ariana Saffold, Graduate Student at Iowa State University, discusses a study whose objective was to characterize the thermal, mechanical and structural properties, as well as chemical interactions between components of formulated bigels. A combination of a gelatin hydrogel and rice bran wax-based organogel with soybean oil as the continuous phase was used for bigel preparation. The ramifications of this study’s results revolve around the successful characterization of this system as a “true” bigel that is kinetically stable and whose properties can be tailored for specific applications in the food, pharmaceutical and cosmetic industries.
