These came out so much better the second time around. Since I was doing a do-over anyway I decided to change up a few of the ingredients just to keep playing around with the recipe.
This recipe is so versatile that you can use any dairy or non-dairy milk, half & half, or heavy cream (I’ve used all of these). The consistency of the dough may vary, but it will still be in drop biscuit texture. 
No matter which version you use as long as the sweet potato is completely puréed, you’ll get a great tasting biscuit.
3 cups flour
1 tbsp baking powder
1/4 tsp baking soda
1/4 tsp salt
Cinnamon (to taste-optional)
1 cup puréed sweet potato
2 cups warm almond milk
Vanilla extract (1-2 tsp)
Bake at 450 for 20-22 minutes
