Chicken Kadu, a traditional Afghan dish, combines tender chicken with a rich, flavorful sauce made with tomatoes, spices, and often includes pumpkin or butternut squash. Here's a simple recipe to try:
Ingredients:
-2 kg chicken
2 cups pumpkins
2 onions, finely chopped
4 tomatoes, diced (or 1 can of diced tomatoes)
4 cloves garlic, minced
1 tablespoon ginger, grated
1 teaspoon turmeric powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon chili powder (adjust to taste)
1 teaspoon garam masala
Salt and pepper to taste
2 tablespoons tomato paste
3 tablespoons vegetable oil
Fresh cilantro, chopped (for garnish)
1 cup water or chicken broth
Instructions:
1. *Preparation:*
Clean and cut the chicken into pieces if not already done.
Peel and cube the pumpkin or butternut squash.
2. *Cooking the Chicken:*
In a large pot or Dutch oven, heat the vegetable oil over medium heat.
Add the chopped onions and sauté until golden brown.
Add the minced garlic and grated ginger, and sauté for another minute.
3. *Adding Spices:*
Stir in the turmeric, ground coriander, ground cumin, paprika, and chili powder. Cook for about 30 seconds to release the aromas of the spices.
4. *Tomatoes and Tomato Paste:*
Add the diced tomatoes (or canned tomatoes) and tomato paste. Cook for about 5-7 minutes until the tomatoes break down and form a thick sauce.
5. *Cooking the Chicken:*
Add the chicken pieces to the pot. Season with salt and pepper.
Cook the chicken for about 10 minutes, stirring occasionally to coat the chicken with the sauce.
6. *Adding Pumpkin and Simmering:*
Add the cubed pumpkin or butternut squash to the pot.
Pour in the water or chicken broth, stir well to combine.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 25-30 minutes, or until the chicken is cooked through and the pumpkin is tender.
7. *Finishing Touches:*
Stir in the garam masala and cook for another 2-3 minutes.
Adjust seasoning with salt and pepper as needed.
8. *Serving:*
Garnish with fresh chopped cilantro.
Serve hot with steamed rice, naan, or Afghan bread.
