Chicken Curry Recipe Without Tomatoes & Yogurt | How To Make Chicken Curry Indian Style | Easy Chicken Curry Recipe

Ingredients required for making chicken curry - Serves 5 to 6
1.1 kg chicken with bones. Can also use a whole chicken cut into pieces.
500 gm onions
46 gm garlic or 1 whole head of garlic
30 gm ginger
2 large potatoes cut into quarters
2 fresh green chilies (optional)
1 dry bay leaf
3 to 4 green cardamoms (I used 6 )
1 inch long cinnamon stick
1 teaspoon cumin seeds (jeera)
1 dry red chilli (optional)
1 teaspoon kashmiri chilli powder or 1/2 teaspoon regular chili powder or cayenne pepper
1 teaspoon sweet paprika (optional)
1 teaspoon turmeric powder (haldi)
2 teaspoons ground coriander (dhania powder)
1 teaspoon ground cumin (jeera powder)
1 teaspoon garam masala powder
2 teaspoons salt or as per taste
1 teaspoon sugar
chopped coriander leaves (optional)
1 teaspoon fresh lemon juice
4 to 5 tablespoons oil
METHOD -
Add ginger and garlic along with 1/3 rd cup water in your blender jar and make a smooth paste
Heat oil in a pot on medium heat and add dry bay leaf, green cardamoms, cinnamon stick, dry red chilli and cumin seeds
Allow the seeds to splutter and then add sliced onions
Add a sprinkle of salt and fry the onions on medium heat stirring them frequently till they become golden brown
Add the ginger garlic paste and stir for 2 mins
Add the chicken and stir on high heat till the chicken gets a pale color
Add Kashmiri chilli powder, paprika, turmeric, coriander powder, cumin powder and salt.
Stir the chicken with the spices on medium heat for 2 to 3 mins.
Cover on medium heat for 5 mins
Add potatoes, garam masala powder, sugar, green chillies and one & half cups of hot water
Cover on low heat for 25 mins or until chicken turns tender. Please remember to give a stir in between.
Do a taste test and adjust the seasonings if required.
Add chopped coriander leaves and lemon juice for freshness
you can also add a few spoons of cooking cream/sour cream/coconut milk/half and half for that extra richness
Serve with hot rice/roti/paratha/naan
