Soya Bean Jhol Achar for Mo:Mo
There are many types of sauce/jhol that you can have with Mo:Mo. Today I am making one without using any tomatoes.

Ingredients:
1⁄3 cup soya beans
1⁄3 cup peanuts
1⁄3 cup sesame seeds
1.5 pint water
2 x medium sized bay leaf
1 x cinnamon stick
2 tbsp plant based butter
3 tbsp olive oil
1 tsp cumin seeds
2 x large garlic cloves julienned
1 inch ginger julienned
2 x dry red chilli (can use fresh)
1 tbsp Lapsi powder (hog plum) - alternatively lemon
1 tsp timur seeds (sichuan pepper) - optional (I always use it so this time I skipped it)
Small bunch of fresh coriander
Salt to taste
Method:
1. In a frying pan, roast soya beans, sesame seeds and peanuts. Keep stirring them in low heat so they don't burn. Turn off the heat once they turn light brown. Take the skin off the peanuts once roasted.
2. In a saucepan, pour 1 pint of water and add in bay leaf, cinnamon stick and plant-based butter. Bring to boil then keep it aside.
3. In a frying pan, heat oil in medium heat. Add cumin seeds, once the colour changes to golden brown add in ginger, garlic and dry chilli. If using timur seeds you can add them too now. Fry them well.
4. Now grind all the roasted ingredients in step 1.
5. Put everything from step 2-4 in a blender but remove bay leaf and cinnamon stick. Add salt and lapsi powder, remaining ½ pint water and coriander. Blend them all well.
6. Taste it and adjust salt as required and you may add lemon too if necessary 😉
It's ready to serve and enjoy.
