In this episode we travel to Fort Gibson, Oklahoma to visit the actual military fort, a key outpost tied to western expansion, the Trail of Tears, and the Civil War. It’s also where a Cherokee man earned the name Tenkiller—a story that stuck around long enough to name one of Oklahoma’s best-known lakes.
From there, we head to Lake Tenkiller State Park for some truck camping with my dog Preacher. We swim, fish, and try to stay cool in the 105-degree heat with the AC setup running full tilt. I cook Thai chicken and a peanut curry with rice noodles and sweet potatoes while Preacher keeps an eye on camp. Hope ya'll enjoy! Preacher says hay!!

Thai Chicken Marinade
1 lb chicken (users choice here)
2 tbsp chili sauce
2 tbsp fish sauce
2 tbsp low sodium soy sauce
1 tbsp sesame oil
2-4 grated cloves of garlic
1/4 cup brown sugar
Juice from 1 lime
2 tbsp Sriracha
1/2 tsp Better than Bouillon chicken base
Mix ingredients, add chicken, marinate for 1-24 hours
