To witness Maloof's transformation, you first need to complete Sasha's Shooting Gallery and earn its respective trophy "A Victory for Good Taste". Once you earn the mentioned trophy, head to the "Parking Lot" which you can get to by taking the road down from the Lodge. There you will find Maloof so talk to him and watch the cutscene to earn the trophy.
Missable Note: You have to get the trophy right after completing Sasha's shooting gallery to avoid being locked from the trophy because Maloof won't be there after a certain point during the story.
