🇮🇹 Authentic Florentina Steak Recipe
🥩 Ingredients
• 1 Florentina steak (T-bone steak 1.5kg, 7 cm thick) Ideally Chianina beef if you live in Italy. Mine is Certified Angus Beef from Alberta.
• Coarse sea salt
• Extra virgin olive oil (optional, usually added after cooking, I added it before cooking)
• Freshly ground black pepper (optional)
• Rosemary sprig (optional, for aroma—not rubbed on the meat)
🔥 How to Cook It (Traditional Tuscan Method)
1. Bring the steak to room temperature
Let it sit out of the fridge for 1 hour.
This ensures even cooking.
2. Prepare a very hot grill
The grill should be extremely hot before the steak goes on. I did set it up to 500 Fahrenheit degrees.
3. Do not season
Florentines never salt the steak before grilling.
4. Sear the steak
Place it on the grill and cook:
• 4–5 min on the first side
• 4–5 min on the second side
(You want a dark crust but rare inside.)
5. Stand it on the bone
Lift the steak and rest it upright on the T-bone for 2–3 minutes.
This finishes cooking the inside gently.
Make sure that the internal temperature is about

Remove from heat and sprinkle with coarse sea salt.
Optionally drizzle good olive oil and crack black pepper.
7. Slice and serve
Slice it thickly, like a roast, and serve immediately—
always rare or medium-rare to keep it tender.

• A drizzle of lemon juice (rarely used, but some do it)
• A branch of rosemary placed nearby on the grill for aroma
• A side of cannellini beans or grilled vegetables
