Pumpkin Chocolate Chip Cookies
Ingredients:
• 250g Pumpkin puree
• 80g AP flour (or 80g Oat flour)
• 60g Vanilla Protein Powder
• 28g Light Butter (softened/melted)
• 20g Brown Sugar
• 5g Stevia (or other sugar free sweetener)
• 2tsp Vanilla extract
• 30g Sugar free maple syrup
• Pumpkin pie spice as desired
• Cinnamon as desired
• Pinch of salt
• 15g Chocolate Chips
Instructions:
1. Combine all ingredients into a bowl/container, and mix.
2. Scoop out cookie dough onto a parchment covered baking pan.
a. I use a spoon, and each cookie is 1 spoonful of dough.
3. Bake in the oven at 350F for 7-9min (time may vary based on cooking device)
a. For a moist cookie, they shouldn’t be cooked all the way through when taking out of the oven. Want it to be soft.
4. Add a pinch of flaky/coarse salt to the top of the cookies
5. Let cool for 15min and enjoy!
I prefer storing these in the fridge and eating them cold.
Macros for entire batch (recipe creates ~12 cookies)

70 calories, 5g protein, 1.5g fat, 9.5g carb, 1g fiber
