A recipe re-creation of one of the most delicious treats from my recent visit to Sal, Cape Verde.
This beauty of a sandwich has layers of sweet and smoky ‘bacon’, eggless omelette, chick’n, avocado, salad and lashings of vegan mayo in a lightly toasted tower of bread. It’s UN-FRICKIN-BELIEVABLE!!!!

‘Bacon’: (inspired by The Edgy Veg)
2 pieces of rice paper
17g coconut oil (1 tbsp), melted
4g miso (1/2 tsp)
12g tamari (1 tbsp)
3g liquid smoke (1/2 tsp)
5g maple syrup (1 tsp)
1/4 tsp garlic powder
Eggless Omelette:
70g tofu, silken
1/4 tsp garlic, minced
8g miso (1 tsp)
Pinch of paprika
4 tbsp water
20g plain flour
3g baking powder (1/2 tsp)
Salt and pepper
Coconut oil spray
Sandwich ingredients:
3 slices of bread, lightly toasted
Vegan mayonnaise
9 cherry tomatoes, sliced
1/2 an avocado
Lettuce
1 vegan chick’n fillet (e.g. Quorn Vegan), cooked and sliced in half.
Making the ‘bacon’:
1. Preheat your oven to 190°C.
2. Put your two pieces of rice paper on top of each other and cut them into strips with a sharp knife. Place them on an oven tray lined with baking paper.
3. Brush a little water on to each side and in-between each of the strips, this will help them to stick together.
4. Mix up your ingredients in a jug and brush the mix on to both sides of the ‘rashers’.
5. Cook for 7 minutes.
Making the eggless omelette:
1. Using the back of a fork, mash together the tofu, garlic, miso, paprika, seasoning and 1 tbsp of the water.
2. Sift in the flour and baking powder. Add the remaining 3 tbsp of water and mix until combined.
3. Fry the mix in a little coconut oil for about 5 minutes on each side, until golden. Use a small frying pan for this (approx 20cm) so that the mix doesn’t spread out too far.
Assembling the masterpiece:
1. Spread mayonnaise on the first slice of toast. Top with 1/2 the sliced cherry tomatoes, avocado, lettuce, eggless omelette, ‘bacon’ and chick’n fillet.
2. Add the next slice of toast and layer with the other 1/2 of the ingredients. Finish with the final slice of toast and voila!
