🐟 Ingredients:
Fresh river fish or Northern Iranian white fish – 2 large fish (about 500–600 g each)
Fresh aromatic herbs from Northern Iran: leek, cilantro, dill, parsley – about ½ cup each, chopped
Fresh lemon – 1, sliced (or pomegranate paste if lemon is unavailable)
Salt and freshly ground black pepper – to taste
Turmeric – ½ tsp
Local oil (preferably local butter or olive oil) – 2–3 tbsp
Wood or charcoal for fire – as needed
🏞️ Preparation:
1. Preparing the fish:
Clean the fish thoroughly and remove the innards.
2. Preparing the herbs stuffing:
Mix the chopped aromatic herbs with pomegranate paste and walnuts, and lightly sauté the mixture.
Stuff this mixture into the cavity of each fish.
3. Cooking over the fire:
Light the wood fire in a traditional clay stove (aghaqoli) and let it burn down to medium-hot embers.
Heat the local butter (or oil) in a large pan.
Gently place the stuffed fish in the hot oil and fry slowly until cooked through and golden.
Cooking time is usually 20–30 minutes, depending on the size of the fish and fire heat.
4. Serving:
Serve the fish with fresh lemon slices, extra aromatic herbs, or a side of pickles and a few dates, directly beside the fire for the ultimate rustic experience.
💡 Pro Tip: For deeper flavor, marinate the fish for 30 minutes with a little local butter, lemon juice, and herbs before cooking, so the aromatic flavors fully penetrate the fish
