Induction Camp Cooking: Veggie Breakfast Scramble

Good morning from Gary's Jamboree 2024 - the NorCal Rivian's club camping extravaganza. We started our day with scrambled eggs - a classic camping breakfast - prepared on our induction cooktop.
Ingredients:
Bacon grease (or vegetable oil for healthier version)
Scallions (most people call them green onions but they're really scallions ;-))
Mushrooms
Bell peppers (red, orange, yellow whichever is handy)
Eggs
Spices:
a pinch of Chipotle - Roasted Garlic - Toasted Onion spice blend from Flatiron Pepper Co.
a pinch of Red pepper flakes for extra heat
Rustic sourdough bread (here we had Hella Wet Levain with Seads from Acme Bread Company)
Sliced avocado
Directions:
1) Set induction cooktop to level 5, and heat up the pan with grease or oil in it
2) Add chopped scalions and mushrooms, saute until soft, for about 4 minutes
3) Add chopped bell peppers, stir briefly. If you want bell peppers still crunchy do not cook too long.
4) Reduce induction cooktop to level 3, and add eggs. Stir egg mixture until it starts setting. When still partially liquid add spices. Continue cooking and stirring and folding until the eggs are set.
5) Serve with sliced avocado and bread
