Sponge Fingers (Ladyfingers) Recipe
Ingredients:
2 egg whites
3 tbsp sugar
1/4 cup (30g) flour
Powdered sugar (for dusting)
Method:
Preheat your oven to 180°C.
In a clean, dry bowl, beat the egg whites until soft peaks form.
Gradually add the sugar and continue beating until stiff peaks form.
Gently fold in the sieved flour (do not overmix).
Transfer the batter into a piping bag and pipe finger shapes onto a baking tray lined with parchment paper.
Dust lightly with powdered sugar.
Bake for 15-18 minutes until lightly golden.
Let it cool before using.
Cream Layer
Ingredients:
2 egg yolks
2 tbsp sugar
1 tsp vanilla
4 cheese wedges
100 ml whipping cream
30g icing sugar
Method:
Whisk the egg yolks, sugar, and vanilla over a double boiler until slightly thick.
(Since raw eggs are used, heat just enough to remove the raw taste—do not overcook.)
Remove from heat and add the cheese wedges. Beat until smooth and creamy.
Whip the cream with icing sugar until soft–medium peaks form.
Add the whipped cream to the egg mixture and fold gently (or beat on low speed) until well combined.
Your tiramisu cream is ready.
Assembling the Dessert
Dip the baked sponge fingers in coffee.
Place a layer of soaked fingers in a bowl or dish.
Spread a layer of cream on top.
Repeat with another layer of soaked fingers and cream.
Finally, dust with cocoa powder.
Chill before serving.
