I love the Mexican slow-simmered pork called chilorio so much, I went all the way to the mecca of chilorio, Mocorito, to learn to make it from the queen of chilorio, Victoria Gonzalez, at her Restaurante Mely. Back at home, I make chilorio with you in my kitchen and we make migas and sincronizadas with it, too. For a sweet ending, one of my most favorite ever cookies, bizcotelas!
