Update February 8, 2022: A single sided heatsink is fine for an SSD with the controller (CPU) on the top side and NAND on one or both sides. Normally there is just one controller on the top of the SSD. The controller is the important item that needs to cool down since it gets very hot.
Update December 26, 2021: Yes, leave the sticker on the SSD 👍
Update November 20, 2021: WD SN 850 currently on sale for $150 @ Best Buy, before applying the WD storage return 15% off deal.
Update November 15, 2021: Opened the heatsink cover and can verify the thermal pad does not get stuck to the SSD. I can also verify the thermal pad has good contact with the SSD as it shows the impression/outline of the SSD and of the screw, that holds the SSD.

Coincidentally, the Sabrent PS5 heatsink arrived after my first video earlier today.
There's also a great deal on the WD Black SN850 1TB @ Best Buy when you recycle an old storage device in store. I had an old USB drive I turned in for this deal at the customer service desk. They were able to apply the 15% off and place the order for the drive. This brought the cost for the 1TB drive down to $140 (sale price $165 - 15% = $140). If the rep can't locate the deal in their system, be nice and ask them to look in the recycle turn in section in "CE Other", consumer electronics, and it will appear there as an icon of a cordless home phone.

This is the lowest price I've seen for the WD Black SN850 1TB SSD.
The WD Black SN850 is the same drive that was chosen by Mark Cerny (Lead System Architect of the PS4 & PS5) for his PS5 SSD upgrade. The WD SN850 is a single sided SSD, all chips are on the top side.
In the video I show a few simple steps on removing the plastic and metal covers to install the SSD in the PS5. I'm now waiting for the Sabrent PS5 heatsink to arrive so I can install the new SSD in the PS5, with the heatsink.

The Sabrent PS5 heatsink replaces the existing metal SSD slot cover. You should be able to use it with single or double sided SSDs, as long as the controller chip is on the top side and in contact with the heatsink. Apparently the NAND memory chips are ok to run warmer so it shouldn't be an issue if there are just memory chips on the underside of the SSD.
The channel NASCompares has some nice videos testing the Sabrent PS5 heatsink and many of the PS5 compatible SSDs:
