In this episode, we bring you the story of one of North India’s most loved and distinct biryanis — the Moradabadi Biryani. To truly understand what makes it special, we travelled to the city of Moradabad itself.
There, we met Dr. Anas and Sayeed, two passionate food lovers who guided us through this delicious journey. Our first stop was Rashid Bhai’s workshop, where we got an up-close look at how this humble yet flavourful biryani is prepared. The recipe may seem simple, with minimal spices and just a handful of ingredients, but it’s the technique and the irresistible aroma that make all the difference.
Next, we were welcomed into a home to try a soulful, homemade Moradabadi biryani, made just the way it has been in local households for generations. Once considered a domestic staple, this biryani has now grown into a hot favourite across cities and communities.
We then explored some of the most iconic biryani joints in Moradabad. Our first stop was Alam Biryani, a name now almost synonymous with Moradabadi Biryani. Their fame runs so deep that many biryani stalls in Delhi have even adopted their name. The biryani here was fluffy, fragrant, and incredibly light — truly a delight in every bite.
Our next visit was to Khalifa Biryani, believed to be one of the oldest in the city. Their version, too, was phenomenal — full of flavour and steeped in legacy.
After this flavourful trail, we began to understand the nuances that make Moradabadi Biryani what it is. The use of spices is minimal, allowing the natural flavours to shine. The meat is cooked separately till about 80 to 90 percent done before being added to a tempering of green chillies and whole aromatics. Finally, everything comes together with long-grain basmati rice — the true soul of this dish.
This biryani may be gentle on spice, but it’s rich in soul — and we can’t wait for you to experience it with us.
