From a rusty 100 yen (~$1) Santoku knife to a clean, razor sharp edge – this is Project: KATANA, Mission 005.
In this video I:
Remove rust with sanding sponges (#36 → #120 → #240)
Kill the old edge and reset the blade geometry
Thin the blade at 15° for a better cutting profile
Strengthen the edge at 30° for daily use
Sharpen with whetstones: #400 → #1000 → #4000
Remove the burr with a leather strop and a stone
Do a final test cut to show the result

This is knife No. 005 in my goal to restore 1,000 dead knives.
