Shredded Beef Taquitos
Taquitos, sometimes referred to as rolled tacos or flautas are typically filled with tender beef or chicken and maybe stuffed with cheese. Sometimes we add beans to the mixture. It’s typically fried, and often times baked.
This delicious recipe simply contains seasoned and slow cooked shredded beef. This tender meat is mixed with a blend of Mexican cheese - all tucked in a corn tortilla and fried to its perfectly crisp.
It’s a simple yet satisfying appetizer or meal and it’s fairly easy to make. Dress it up with your favorite toppings, and you’ll have a crowd-pleasing treat. It’s so delicious, I guarantee you’ll have more than two taquitos. This truly is the perfect weeknight dinner. Husband approved😋
Prep time: 20 minutes
Cook: 4 hours, 5 minutes (includes slow cooker)
Yield: 24 taquitos, more or less
✨Ingredients
Shredded Beef
•2lbs boneless beef chuck roast, quartered then shredded
•onion powder
•garlic powder
•seasoned salt
•oregano
•black peppercorn
•4 beef bouillon cubes
•2 cups water
Taquitos
•shredded beef
•corn tortillas
•Mexican style blend cheese, shredded
*Oil for frying
**Toothpicks
Toppings, optional
•pico de gallo
•guacamole
•lettuce, shredded
•radish, sliced
•Mexican crema or sour cream
✨Directions
Shredded Beef
Start off by cutting the beef into 4 nearly equal parts. Then place meat in crock pot. Add the seasonings to the pot - onion and garlic powder, seasoned salt, oregano and black peppercorn. Add the bouillon and 2 cups of water. Cover and cook on high for 4 hours.
Once cooked, remove the roast and allow to cool for a few minutes. Then shred with two
forks. Discard any fat. You won't need all this beef - see helpful tips below.
Taquitos
Heat up a comal or frying pan on medium-heat. Add oil to the pan and gently fry tortillas on each side for a few seconds. Then set to the side on a plate or paper towel.
On a clean surface, add a tablespoon of meat and a tablespoon of cheese to a tortilla. Place beef and cheese on one end of the tortilla and roll up tightly. Insert a toothpick to secure the taquito.
Now heat up oil in a large pot or frying pan on medium-high heat. The oil should be no more than half way full. Place the rolled tacos in the hot oil and fry until golden brown - about 2 minutes, flipping once. Remove from oil and place on cooling rack or paper towel to drain excess oil.
Turn off heat and allow the taquitos to cool for a few minutes. Remove toothpicks before
serving. Serve warm. Top with your favorite toppings, pair with rice and beans or enjoy as is.
✨Helpful Tips
•Browning meat is always preferred. Since we are making taquitos and for this recipe, you can just toss the meat in the crock pot. There still will be so much flavor and texture.
•You can use a pressure cooker or the stove as well, time and temperature will vary.
•I don’t add tomato sauce or lime to the roast, because there is always so much leftover, and taquitos don’t require alot of meat. So since shredded beef is so versatile, I tend to use basic seasonings that can be amplified into more, depending on the dish. Sandwiches, noodles, and tacos are just a few other ways to use up this meat. There is so much to do with chuck roast or shredded beef.
•You can also bake at 450F for about 15 minutes, or until crisp. Gently drizzle or brush oil on each rolled taco before baking. For best results, flip half way through.
•You can substitute the beef for chicken. Some use rotisserie or slow cooked chicken. You can use any leftover meat, just make sure it’s shredded or ground.
