🔥 Crispy Gobi Manchurian (Street-Style) 🔥
🥦 For Crispy Cauliflower
Ingredients:
Cauliflower (Gobi) – 1 whole, cut into bite-sized florets
Water – as required (for rinsing)
Salt – a large pinch
For Batter:
Maida – ½ cup
Corn flour – ½ cup
Salt – to taste
Black pepper powder – a pinch
Kashmiri red chilli powder – 1–2 tsp
Water – as required (added gradually)
🥣 Method:
Add cauliflower florets to a bowl, rinse well with water and a large pinch of salt. Let them rest for 3–4 minutes to remove impurities.
Discard the salt water, rinse again with fresh water, and drain completely.
In a bowl, mix maida and corn flour. Add salt, black pepper, and Kashmiri red chilli powder.
Gradually add water while whisking to make a semi-thin batter.
Add the florets and coat them evenly.
Fry in moderately hot oil (170°C) over medium flame till light golden. Remove and rest for a few minutes.
Heat oil slightly more and fry again till golden brown & crispy.
✨ Crispy gobi is ready!
🌶️ For Manchurian Sauce
Ingredients:
Oil – 2 tbsp
Onion – ½, chopped
Ginger – 1 tbsp, chopped
Garlic – 2 tbsp, chopped
Green chillies – 1–2, chopped
Capsicum – ½, chopped
Spring onion bulbs – 2 tbsp, chopped
Coriander stems – ½ tbsp, chopped
Soy sauce – 2 tsp
Green chilli paste – of 1–3 chillies
Ketchup – 1 tbsp
Red chilli sauce – 1 tbsp
White pepper powder – a pinch
Salt – to taste
Water – as required
Cornflour Slurry:
Corn flour – 2 tbsp
Water – 4 tbsp
Final Add-ins:
Fresh coriander – a handful, chopped
Spring onion greens – a handful, chopped
Garam masala – a pinch (optional)
🍜 Method:
Heat a wok on high flame, add oil, onion, ginger, garlic, and green chillies. Stir-fry for 1–2 minutes.
Add capsicum, spring onion bulbs, coriander stems, soy sauce, green chilli paste, ketchup, red chilli sauce, white pepper, and salt. Mix well.
Add water as required and bring the sauce to a boil.
Add cornflour slurry gradually while stirring to thicken the sauce.
Add fried cauliflower, fresh coriander, spring onion greens, and garam masala.
Toss gently on low flame just to coat the gobi.
Garnish with spring onion greens.
